Slow-Cooked Chicken Tacos

  • 2 pounds boneless, skinless chicken thighs (about 6)
  • 4 garlic cloves, thinly sliced
  • juice of one lime
  • 1/2 C chicken broth
  • 1 T homemade taco seasoning*
  • kosher salt
  1. Rub chicken with kosher salt.
  2. In slow cooker, combine chicken, garlic, broth, lime juice, and seasoning. Cover; cook on high, 4 hours (or on low, 8 hours).
  3. Transfer chicken to a serving bowl, and shred, using two forks; moisten with cooking juices.

*For taco seasoning:

  • 3 T chili powder
  • 1/2 t onion powder
  • 1/2 t dried onion flakes
  • 3/4 t garlic powder
  • 3/4 t oregano
  • 1 t crushed red pepper flakes
  • 1/4 t cayenne pepper
  • 1 t paprika
  • 1 1/2 T cumin
  • 2-2 1/2 t kosher salt
  • 1 T ground black pepper
